Fille de Chef, globe-trotteuse, et entrepreneuse, j'ai toujours aimé découvrir les saveurs du monde ! 

Diplômée d'une école de cinéma avec une option réalisation et d'une école de médecine chinoise, puis j'ai continué a complété mon parcours par des formations sur des sujets qui me passionnent : business & design.

Mes compétences sont à l'intersection des sciences, de la création, du business, et me permettent de proposer une approche originale et innovante dans tous mes projets.

—> j'ai d'abord travaillé en tant qu'indépendante
 —> puis j'ai créé mon agence de création digitale
 —> avant de fusionner avec ma dernière entreprise dans laquelle nous avons créé un réseau social autour de la culture et des centres d’intérêts 
—> dont nous avons pivoté le projet vers une brique technologique qui permet en quelques clics de créer la pub de demain : plus interactive et immersive.

Depuis mon exit en avril dernier, j’ai investi quelques tickets sur des start-up et dans l'immobilier.

Je lance à présent Moon, ma 3ᵉ aventure. 

Inspiré par l’astrophysique et la conquête de l’espace, Moon est une chaine de coffee-shop qui souhaite promouvoir une expérience foodtech mémorable.

J'imagine un monde où nous pourrons déguster un croissant chaud et une boisson de qualité constante, peu importe où nous nous trouvons, afin de nous réconforter et accompagner dans les petits moments de la journée.

Aujourd’hui, j’ai 33 ans.

Je n’aurais jamais cru arriver jusqu’ici.

Le temps passe vite — et pourtant, je revois encore très clairement la petite fille que j’étais. Et celle que j'ai envie de devenir dans 10 ans. 

J’ai beaucoup voyagé, à travers le monde comme à l’intérieur de moi.
Je me suis regardée en face. Je n’ai pas tourné le dos à mes responsabilités.
J’ai fait all-in : sacrifié ma tranquillité et tout misé sur un rêve.

Cette vie est la seule que j’ai.
Je me dis toujours que c'est maintenant ou jamais.

Je suis née sur une petite île, à l’autre bout du monde.
Et aujourd’hui, j’ai construit la mienne, ici à Paris.

Une équipe engagée, composée à 80 % de femmes — une immense fierté — fait vivre ce lieu chaque jour.
Notre adresse est aujourd’hui devenue un repère incontournable pour les amoureux des croissants.

Pour mon anniversaire, c'est la saison des galette des rois. 
Faite maison. 
Préparée en direct.

C’est ça, mon cadeau.

La suite ? La santé avant tout. Des amitiés, de la joie. Des apprentissages et des rencontres. Des épreuves vécues ensemble et des célébrations. Du feuilletage, bien sûr. Et tant de belles histoires à écrire, raconter — vivre.

Il y a encore quelques semaines, nous n’avions pas prévu de faire la galette des rois chez Moon Croissant.

Pas par manque d’envie.
Mais par respect du produit.

Une galette, ça ne s’improvise pas.
 Il faut presque un an d’anticipation :
 – maîtriser une nouvelle pâte feuilletée
 – répéter les gestes
 – installer un flow précis
 – former les équipes

Dans l’artisanat, beaucoup de galettes sont préparées dès août… puis surgelées, pour être cuites à la demande en janvier.

Chez nous, ce n’était pas une option.

Et pourtant.

Les équipes ont insisté :
 « Au moins pour nos familles. »

Puis ce sont nos clients les plus fidèles :
 « On peut en commander une ? »

Et sans s’en rendre compte, tout le monde s’est pris au jeu.

Alors j’ai fait ce que je fais toujours dans ces moments-là :
 👉 je me suis enfermée une semaine, seule, en test express.
• déterminer la recette de pâte feuilletée
• choisir la farine adaptée
• ajuster le tourage et la cuisson
• recommencer
• rater
• affiner

Jusqu’à arriver au résultat que vous voyez aujourd’hui.
Grâce aux retours des équipes.
Grâce aux encouragements des clients.

👉 Nous sommes fiers de notre galette des rois.
Cette année, elle est produite en direct, en quantités ultra limitées : 12 par jour.

Disponible pour 6 personnes ou à la part.

 – farine T65
 – frangipane : 95 % crème d’amande brute / 5 % crème pâtissière
 – sirop de miel & vanille
 – produite fraîche, chaque jour

Parfois, ce ne sont pas les plans initiaux qui donnent naissance aux plus beaux produits.
Mais l’écoute.
L’exigence.
Et l’envie de faire plaisir aux personnes qu’on apprécie.

L’année prochaine, on s’alignera sur les boulangeries qui en produisent entre 4 000 et 6 000 sur le mois de janvier.

Il fallait absolument que je goûte à la galette d’Ama ATHIGE SILVA.

Quand tu vois une entrepreneuse passer une semaine entière à peaufiner une recette qu’elle n’avait encore jamais vendue, juste pour le plaisir de la partager avec ses clients, tu sais que tu vas te régaler.

Ce matin avec Stephane Marnot et toutes les équipes, réunion de chantier rue du Caire.

Autant vous dire qu'elle n'a pas résisté très longtemps 🫠 

Toute l’équipe du chantier était d’accord, on n’avait jamais mangé une galette aussi bonne 😅
