For years it has been shown that vibrations, including sound waves - and therefore music - affect many living beings. Among them are the yeasts, responsible for the fermentation of Champagne and the creation of its carbon dioxide (bubbles) inside the bottles. After several years of studies and research, we decided to experiment with loudspeakers in some cellars in the French region of Champagne, to create a unique drink in the world: a Champagne fermented with music, thus altering the physical behavior of its bubbles, making them finer and more dynamic in the mouth, and musically paired for every occasion. Being an innovation project founded on solid scientific bases and enormous creativity, the project was endorsed by prestigious sommeliers and finally accepted and validated by the Champagne Wine Interprofessional Committee (CIVC), the regulatory body of the Protected Designation of Origin "CHAMPAGNE "
