I’ve recently taken on the role of UK Brand Manager at Leathera, a custom leather producer working with some of the top hospitality venues across Europe. We design and handcraft everything from menu covers and coasters to placemats, bill presenters, coffee & tea stations, and amenity boxes, all tailored to fit your brand identity, colour scheme, and service style.

With a background of 15+ years in the hospitality industry, mostly managing and consulting for high-end bars and restaurants, I know just how much the small details matter. At Leathera, we help venues enhance the guest experience through quality, durability, and timeless design.

Charlotte Street Hotel

Training and coaching of a team of 22 members
Recruiting and supervision of staff including management of rotas and leading weekly team meetings
Responsible for the beverage operation of both restaurant and bar
Conducted monthly bi-monthly stock takes to ensure targets are being met
Daily opening and closing duties including cash handling
Conducted training sessions in order to maintain a high level of quality across the team

Bar Manager

Four Sisters Ltd

Responsibilities and achievements include:
Negotiated and established pouring deals with brands across two Four Sisters venues
Establishing the manual for the bars including checklists, procedures, recipes, health and safety
Implementation of a training program between the two sites on specific brands
Recruiting and supervision of staff including training, weekly rotas
Efficient management of stock and management including maintaining the high levels of gross sales (>74%)
Implementation of “Sip ‘n Snack Menu” between both sites which increased sales by 9%
Participated with the bars through Rebel Yell whiskey at “Cocktails in the City” and received the 5th place out of 25 bars on the overall competition winner.

Operations Manager

Ethika 

Responsibilities and achievements include:
Implementation and creation of bar concept based on the philosophy of lower sugar, lower alcohol, lower impact, “Sociable Drinking”.
Planning and execution of key activities ensuring a successful bar opening
Recruitment of staff including training 
Creation of menu based on 3 sections: Spritz, Aperitif and No & Low

Consultant

HIX Restaurants

Responsibilities and achievements include:
Responsible for operation of both the restaurant bar and separate cocktail bar
Managing a team of 14 staff members
Conduct training sessions to maintain a high level of quality across the team
Implemented checklists and procedures to increase efficiency of operational aspects

Bars Manager

Four Sisters Townhouse

Integral role in the design of the bar
Creation and implementation of the bar concept based on seasonality and history of drinks with a weekly
changing cocktail menu built around home-made ingredients
Negotiated and established pouring deals with brands across two Four Sisters venues
Self-motivated research on Amari and bitters led to the creation of a bespoke amaro to be sold in the bar
The initial set-up of supplier accounts and accountability for equipment orders for bar and kitchen
Established the H & S Manual for the kitchen under the guidance of an external consultant
Developed and lead training program for team members to increase drink knowledge, round
building and technique

General Manager

Barworks Ltd
