Currently, I'm working as a freelance brewing consultant and I help breweries to optimize their brewing processes, ensure quality, and achieve their production goals. 

I specialize in recipe formulation, raw material selection, equipment setup, and process optimization. My expertise has been pivotal in identifying and resolving operational inefficiencies and quality issues, allowing breweries to produce exceptional beers that meet or exceed customer expectations. 

I've also helped breweries across the EU, specifically in Spain and Germany to develop new product lines, streamline operations, and enhance overall profitability. With a deep understanding of brewing science and technology, combined with strong analytical and problem-solving skills, I bring valuable insights and solutions to every project I undertake.

Full responsibility for all production, cellaring and packaging operations on a 7bbl system. 

Stock control and raw materials purchases. 
Working closely with sales, distribution and marketing teams to make sure our beer has an important stake in the Bermuda beer market as well as a significant presence on social media.

During my time working for this company I had the chance to set-up and commission a manual canning line and seamer as well as a keg washer. Also re-define and implement the brewing process to make it as most efficient as possible, looking for new suppliers to adjust our production costs and defining a hiring process to be able to have brewery assistants properly hired and trained.

Planning, designing, processing and implementing a full beer rebranding that has been noticed all across the islands as well as present on the bermudian community as a resuscitated brewery that was about to shut down.

Design, developing and brewing a whole new range of beers that nowadays are the most known and loved beers in Bermuda suh as Session IPA, Hazy IPA, Lager, Oktoberfest and a beautiful Coffee Stout collaboration with a Coffee Roastery that operates above us.

Maintenance and troubleshooting the whole brewery equipment as it was needed as well as installing new draught systems has been part of my multitasking responsibilities. Cleaning beer lines on a scheduled regular basis. 

Dealing with clients to increase sales and beer promotion across the board as well as organising  and assisting to the events representing the brand and company.

The Cayman Islands Brewery

In charge of overseeing the brewing operations and ensuring that production and quality activities are performed to the highest standard.
Troubleshooting any product problems and overall trialling new ways to improve finished beer and process methods. 
Liaising/troubleshooting with the engineering department regarding any breakdowns.
Stocktaking of raw materials, chemicals and sundry production materials
SOP updates and implementation, and overall working with the Quality Systems Manager 
Designing and brewing a successful American pale Ale beer never brewed before on the islands
Performing filtrations through DE Plate and frame filter on a daily basis

Key Achievements

Identifying and implementing a new filtration process that made us reduce our beer losses by 5% increasing our volumes after filtration and making the company more profitable with no investments.

Zerodegrees - Microbrewery & Restaurant

Solely responsible for production at our Blackheath brewery (~620 bbls per year) 
Crafted recipe for our SIBA Gold-winning Spring Blossom Saison. 
Worked to educate staff and our customers about my beers, the brewing process, a proper pint, and more.
Managed all Production and QA at the Blackheath facility. Multiple awards won for our beers. Completed necessary maintenance to keep things running, planned or unplanned.

Head Brewer

Camden Town Brewery

Execute all necessary brewing and cellar operations – Duties includes: Brewing in a 20HL. fully automated Braukon kit, grain intake and handling through to wort production, yeast handling and fermentation monitoring and control, cellar operations including centrifuge with Alfa Laval 850, dry-hopping with Braukon hop cannon and DE Kieselguhr filtration and sterile side with plate and frame filter, preparation of the packaging lines and machinery, bottling,canning, kegging, tanks CIP.
Ensure all paperwork and QC checks are completed in full to an acceptable standard.

BrewDog

Brewing and cellar operations including dry-hopping (Brewdog System), tank CIP's on a Rolec set, cropping yeast, CIP’s, assisting for filtrations, tasting panels, monitoring processes on a 100HL. Rolec kit

Cerveza TYRIS

In charge of all production, from raw materials to bottled beer in the Brewhouse. Cellar operations (tank actions, conditioning, priming) and quality assurance trough HACCP

Cerveza Artesana Ibón (Contract Brewing)

Running a small contract brewing business from the original idea (name, branding, marketing, distribution, delivering, tastings, managing, accounting...) until the final product and selling.
I also personally brewed Cerveza Ibón at Tyris facilities where I had worked as Head Brewer afterwards.

Pursued my passion in home-brewing by contacting a microbrewery, Cervesa del Montseny, and offering my assistance. There I worked closely with the head brewer and another assistant as a team. Duties involved learning small scale industry techniques, operating high pressure systems, ensuring sterile working conditions and working with concentrated chemicals.
