Cahokia Rice began with a question: Can we create a healthier, more nutritious rice for the world? After years of research, we've answered it. Cahokia Rice is the world's first non-GMO, naturally high protein rice with the lowest glycemic index ever reported in a commercially viable rice. Developed by researchers at Louisiana State University using traditional breeding techniques, Cahokia Rice has a protein level of 10-12 percent compared to an average of 7 percent found in most rice. It's an easy, delicious way to pack more nutrition into meals served at any food service operation. Our customers include: universities, hospitals, senior living communities, and most recently professional sports teams such as the Denver Broncos. Cahokia Rice is grown on a fourth generation family farm near the Mississippi River in Southern Illinois using truly sustainable and innovative farming techniques. Farming is natural to owner Blake Gerard and it's in his DNA. His family stands behind every grain of rice they harvest.
