Executive Chef/Executive Pastry Chef

Responsibilities included opening Restaurant, doing daily prep and cooking as well as small catered events as well as offsite functions, other responsibilities included some baking and finishing of cakes, and various desserts, setting the line for operation as well as dealing with purveyors on a daily basis, ordering products and coordinating with the front of the house staff. Other duties included but not limited to working the fry, grill prep and salad stations doing menu changes as well as menu costing, testing new recipes and keeping budget costing to a minimum.

Executive Chef

Responsibilities include operation of the cook's line daily special creations, daily soups and preparing various desserts for retail sales as well as catered events such as baking and finishing various cakes, and other various baked goods. Handling and prepping all catered events as well as plating, serving and carving if requested duties also included working fry, salad, prep and grill stations. Duties also included menu changes and testing new recipes for clients other duties included acting Restaurant Manager dealing with guests concerns and complaints, requests as well as working side by side with other managers and directors.

Responsibilities included all hiring and terminating of employees dealing with purveyors on daily basis prepping and cooking for all catered events, menu ideas and changes testing new recipes, cost control and various baked goods such as baking and finishing wedding cakes, birthday cakes, various cakes, cookies and other confections such as truffles, brownies also various dough's, breads as well as various buttercreams and icings duties also included all ordering of products, dealing with customers on a one on one basis and some delivery of items to clients.

Responsibilities included instructing a class of about 25-35 students on production duties such as baking various desserts such as cookies, wedding cakes,  various confections as well as making buttercreams, various icings such as ganache as well as various custards and dough's duties also included setting up daily demos and delegating various tasks to the students. I also taught weekend classes to a small class of adults on various savory dishes as well as planning the menu.
