Currently, serving as a Professor (Food Science) at College of Food and Agriculture, UAEU. I possess a strong theoretical and experimental knowledge and expertise in chemistry and characterization of food proteins and polyphenols. I am trained and have pursued my research career as a multidisciplinary research scientist encompassing the areas of food production, post-harvest technologies, food and health and food waste or by-product utilizations. My research interest is to enhance protein functionality and bioactive properties in food and biological systems through increased molecular understanding of protein modifications. My recent research is focused on “Alternatives proteins and Plant-based meat analogues” as potential sustainable food systems as well as utilization of food by-products/wastes for active packaging.
