Operated 9 restaurants (2 Slim Chickens & 7 Wendy’s) with 185 employees.

Head of Operations - Wendy's Kuwait 

Slim Chickens is a fast casual chicken concept from Fayetteville Arkansas, US. Franchise rights for Middle East are under Alghanim Industries. 

Responsible for all elements of Slim Chickens brand and operations in the Middle East market

Opened the first international franchise of Slim Chickens in Kuwait (overseeing: project planning, manning, training, marketing, procurement, supply chain, strategic planning and operational execution)

Planning and monitoring the day-to-day running of the business to ensure smooth operations

Ensure that Slim Chickens brand strategy is well-coordinated and delivered through support functions

Evaluating overall performance by gathering, analyzing and interpreting data and metrics

•	Support all properties during the hotel opening (or conversion) process to ensure that the F&B operation opens on time,on brand and on budget
•	Responsible for ensuring that all newly opened/converted hotels open on brand and deliver their F&B budget
•	Supporting the general managers and F&B management in driving performance by realizing the true revenue and profit opportunities
•	Supporting pre-opening properties across all full-service brands with on-site F&B management onboarding and frontline colleague training
•	Develop and implement systems and processes to support all brands during the hotel opening/conversion process
•	Support the improvement of IHG’s owner engagement by ensuring that the F&B operations delivers the expected financial returns and service experience
•	Set up and manage a F&B taskforce network that is engaged with pre-opening properties where required

Food & Beverage Manager - Openings and Training - Asia, Middle East and Africa

•	Actively engaged with F&B leaders and project stakeholders in a global and cross functional operational environment
•	Governed and managed strategic portfolio of priority projects to maximize F&B performance, provided regular updates to the global programme management office for executive committee reporting
•	Supported the VP of F&B, AMEA in the development and delivery of a three year global F&B strategy and a F&B people strategy
•	Attended senior leader meetings to present key updates on the F&B project landscape
•	Developed and delivered a standardized F&B concept in a box framework that was implemented globally. Supported development of several standardized restaurant concepts including service standards, marketing/visual style guidelines, recipes and training
•	Supported development and operations for all types of F&B concepts ranging from coffee shops, delis and casual dining brands to Guide Michelin star and celebrity chef restaurants
•	Participated in the development of the first ever AMEA wide promotion to drive F&B revenue in all bars which resulted in a 8% growth of revenues on last year
•	Part of the core cross-functional project team that developed a 2-day training workshop targeting property level senior management. The workshop trained senior managers on how to manage the F&B business in order to compete with freestanding F&B outlets and drive superior F&B performance. Personally delivered the training to over 200 general managers, sales and marketing directors, revenue directors and F&B directors 
•	Supported F&B directors and executive chefs during pre-opening and opening stage to ensure compliance with brand standards, that brand differentiating service touchpoints are delivered and training plans are in place

Food & Beverage Programme Manager - Global

•	Supported a 1.4 billion dollar F&B business in over 250 hotels with 900 outlets in 39 countries and 29,000 colleagues serving over 40 million customers per year across the different IHG brands
•	Developed extensive brand specific training modules for all meal periods and conference and banqueting on an online training platform with HD video lessons and assessments. Piloted the training tool in 30 properties across AMEA which led to an average improvement of guest satisfaction by 5 points 
•	Developed comprehensive F&B brand standards for all IHG brands in AMEA (Holiday Inn Express to InterContinental Hotels and Resorts) to drive consistency and operational excellence 
•	Supported the development and launch of an F&B community platform on the IHG intranet for AMEA that enabled driving colleague engagement and helped build a culture of F&B. The platform was rolled out as best practice in all other regions and became the top 3 most visited pages in AMEA
