Dr Nolan Michael Mascarenhas. Has a nice ring to it, Though I'll admit, am processing the fact that the guy from my team during our corporate life eons ago   is now a Doctor of Culinary Anthropology. Switzerland, no less. They clearly didn't check with me first lol 😁 !
But here's the thing: if anyone was going to pull off this, it was always going to be you. I saw it back then, even when you were splitting yourself between PowerPoints and pans
I watched you ride and passion for restoring retro bikes and many other broken stuff  . HOG runs from Goa, India Bike Week trips, You taught me more than a few photography tricks, showed me hidden corners of Goa that even Google Maps hasn't discovered, and I like to think I contributed as well, mostly my presence and questionable navigation skills.
And then there was that house project. That rundown Goa house you picked up, mid renovation, half-finished, and somehow you convinced me to be Guinea Pig No. 1. I tested the plumbing literally and metaphorically, gave feedback on the vibe, and pretended I knew what "good flow" meant in interior design. If that place is thriving now, I'm taking 2% credit. At least.
But here's what I couldn't from you, no matter how hard I tried: that effortless ability to charm a room, to find the story in a spice, the memory in a meal. You have a gift for making people feel seen whether it's through your writing, your hosting, or just the way you talk about food 
So yeah, Dr.  this honor isn't just deserved. It was inevitable.
Proud doesn't cover it, my friend. But I'll take the win anyway
Here's to more stories, more rides, more half-renovated houses that need testing, and more reasons to remind you that I knew you when you were still dropping plates in 2006.

18 years ago, a college kid elbow-deep in service slips, balancing plates, prayers, and dreams while waiting tables and manning the kitchen pass — mostly to pay my way, partly to stay close to the only world that ever made sense to me. 

By day working a corporate job to keep the parents happy for the dream of a corner office and the title of a VP attached, and then rushing to night college and wait tables at smokey bars keeping my head close to the craft,  I didn’t know it then, but those chaotic dinner rushes, those chef glares, those midnight bike rides home stopping at Churchgate station for a omlette bread and wada pav within budget, with the perfume of garlic on me and ambition on my shirt were quietly shaping something bigger.

Somewhere between the clang of pans and the poetry of a perfect plate, I found my voice — not shouting across a kitchen line, but whispering through the written word in multiple media outlets that gave me a chance. 

Over the years, that whisper grew into a steady presence in India’s culinary story… a custodian of flavours, memories, history and all the unspoken things that make this world's food culture so wildly magnificent.

And today, that long, messy, magical journey has led to something I accept with equal parts disbelief and gratitude: an Honorary Doctorate of Philosophy in Culinary Anthropology from Dunster Business School, Switzerland.

If you told 2006-Nolan this would happen, he’d probably have dropped a plate in shock.

This honour is not mine alone. It belongs to every mentor who knocked sense into me, every chef who inspired me, every friend who cheered from the sidelines, and every well-wisher who believed in my work even on days I didn’t. 

You shaped my palate, my prose, and my perspective.

Thank you for being part of this improbable, beautiful ride.

Thank you for reminding me that curiosity is a compass, humility is a strength, and that India’s culinary journey is far from finished — and what a privilege it is to help document it.

Here’s to more stories, more flavours, and more serendipitous chapters ahead.
