I led several exciting new projects in a casual dining establishment that I found very invigorating. Our primary objective was to provide exceptional experiences for both our team members and customers. I was responsible for developing our drinks menu, providing sales training for our team, and overseeing the training and development of our management teams to ensure exceptional service delivery.

Our primary focus was on creating a new cocktail menu that catered to a wide range of tastes and preferences. To achieve this, we worked closely with our bartenders to develop innovative and enticing cocktails. We also provided comprehensive training to our front-of-house staff to enable them to upsell our drinks offerings and maximize sales.

Additionally, we prioritized creating a welcoming atmosphere for our customers. We believed that this was achieved by ensuring that our team members were happy, motivated, and engaged. To achieve this, we provided extensive training and support to our management teams to help them build strong and positive relationships with their teams. We also ensured that our team members had access to the resources they needed to deliver exceptional customer service.

Throughout our initiatives, we remained committed to putting both our team and customers first. We believed that by developing our teams and providing them with the tools and knowledge they needed to excel, we could create an environment where our customers felt valued and appreciated. I am proud of the results we achieved and the exceptional dining experiences we delivered to our customers.

Leading the Operations of an amazing hospitality business.  With turnover in excess £9 million a year and overseeing the development of over 250 staff.  

The role covered all aspects of operations from P&L management to strategic planning for each venue with team development being on top of my agenda to get right.  'Right people, Right place' was the mantra I used in order to ensure that both the individual and the business would strive and deliver everything they could.

In 2016, our award-winning company launched two new concept bars - 29 Park Place and Dead Canary, both of which quickly made it into the Top 10 UK Bars. As the project lead, I was excited to work on these amazing projects that involved overseeing more than 30 staff members in each venue.

One of the key aspects of my role was coaching senior managers to deliver their KPIs and establish essential processes such as stock management, cash checks, and audits. We checked these processes weekly to review the growth and service standards we were delivering. Additionally, I was responsible for providing sales training to the team members to ensure they had the necessary skills to sell effectively and boost revenue.

Through our comprehensive sales training, we provided our team members with the tools and knowledge they needed to deliver outstanding customer service and increase sales. We taught them how to engage with customers, provide excellent recommendations, and effectively upsell products. By doing so, we were able to grow our revenue, enhance our service standards, and create an enjoyable and memorable experience for our customers.

I am proud of the results we achieved and the exceptional service we delivered to our customers. By investing in sales training and developing our team members, we were able to create an exciting and successful atmosphere in both of our bars.

I opened a new venue from scratch after the previous one had closed down. Leading the team and serving as the knowledge and motivation arm of the business were essential to its success. I brought innovative ideas to the table and consistently challenged the norm. Coaching and developing the team was another significant aspect of my role, and I led by example.

One of the key areas that I focused on was sales training. I knew that by developing our team members' sales skills, we could maximize revenue and increase customer satisfaction. I provided comprehensive sales training to the team members, teaching them how to engage with customers, provide exceptional recommendations, and effectively upsell products. We also implemented sales metrics to measure the team's performance, and I provided coaching and feedback to help them improve.

In addition to sales training, I also played a crucial role in coaching and developing the team. I led from the front, setting the standard for excellence and providing guidance and support to my colleagues. I believed that by investing in our team members and empowering them to take ownership of their roles, we could create a positive and successful working environment.

I am proud of the success we achieved in the venue, and I know that our focus on sales training and coaching played a significant role in our achievements. By investing in our team members' skills and development, we created a motivated and skilled workforce that was committed to delivering exceptional service and driving revenue growth.

I consider myself very privileged to have worked for such a great company, leading sales teams of over 100 staff and managing turnovers of up to £5 million. One of my main achievements was joining the millionaire club in 2009, 2010, and 2011.

As the leader of the sales teams, I oversaw all aspects of the business, with a focus on maximizing revenue and driving sales growth. I worked with multiple teams and some amazing people, helping them to develop into bigger roles and better themselves, both in their professional and personal lives.

One of my primary responsibilities was to lead and motivate the sales teams to achieve their targets and exceed customer expectations. I developed sales strategies and implemented sales metrics to measure the team's performance. I also provided sales training and coaching to help team members improve their skills and increase their productivity.

Through my leadership, we were able to achieve outstanding results, consistently delivering excellent customer service and exceeding our sales targets. I am proud of the role I played in developing and leading the sales teams, and of the growth and success we achieved together.

What a day ahead!! 

I’m on my way to the BII People Conference this morning — one of my favourite events of the year. Days like this are all about #connection, hearing honest stories from the frontline, and learning from some brilliant operators!

Really looking forward to hearing from people like Harry Gurney, Jordan Davids, Tim Skinner, Sam Hagger FBII, Merlin Griffiths, Katy Moses CBII Dawn Lawrence CBII - MIH - Honorary Doctorate in BA and so many others who are out there pushing our industry forward. These are the voices who remind us what hospitality is really about — people, community, and giving a damn.

Then tonight, Anne-Marie and I will be heading to the NITAs. To even be nominated is something we don’t take lightly. We’re genuinely humbled. Crack On was born from a tough chapter, so moments like this hit differently. It’s a reminder of the journey, the graft, and the people who’ve had our backs.

What a week it’s been.. 💙💙


It kicked off celebrating the incredible graduation from Circe's Rooftop and Queens team—a huge milestone for everyone involved. Then we dove into a fantastic session with Polaris Elements, exploring psychological safety and the power of #culture—amazing to see the team embrace how everyone shapes a business’s culture.

Midweek took us to the BII Training & Innovation Day, thanks to Steven Alton CBII and #team for an outstanding event, rounded off with the NITAs. We might not have taken home the trophy this time, but I’m beyond proud to have been part of it. Huge congrats to Wells and Co. and especially the Tollemache Arms —on to bigger and better next year!

And to cap it off, I had the joy of playing rugby with my son and with my old school teacher, referee Gwyn Morris—an absolute full-circle moment for Headway Cardiff And South East Wales 🏴󠁧󠁢󠁷󠁬󠁳󠁿

Wrapped up this Sunday with an incredible nine-mile walk in the beautiful Brecon Beacons 🏴󠁧󠁢󠁷󠁬󠁳󠁿🏴󠁧󠁢󠁷󠁬󠁳󠁿

It was amazing to go again with the Men & Mountains crew led by the fantastic Dan Stanley. 

My first time back in about six months, and it felt like picking up right where we left off. New faces, old friends, and real connection—exactly what Sundays should be about.

I’m back again for round two — last year nearly broke me, but it also reminded me how powerful this sector is when we pull together.

Alan Armstrong is putting the band back together for December, and the plan is simple: move every day from the 1st to the 24th and raise some serious money for Only A Pavement Away. They’re doing incredible work supporting people who’ve found themselves homeless, and the impact they make is real.

I’ll be lacing up for 10k a day — you can run, walk, swim, cycle, dance, whatever gets you moving. It’s not about pace; it’s about purpose, community, and feeling part of something bigger during the toughest trading month of the year.

I watched the John Candy documentary this week… and then went straight into Planes, Trains & Automobiles- Bravo Colin Hanks!!

And honestly — it hit differently.
Seeing the man behind the films first — the kindness, the humour, the generosity — made that famous moment in the movie land even harder.

When he looks up and says:

 “I like me.”

 …it isn’t bravado.

It’s a bloke who knows who he is.
Flaws, faults, heart, all of it.
And it made me think.

In our world — #hospitality, #leisure, #sport — we spend so much time looking after everyone else.

Guests. Teams. Families.
We’re wired to give.
But liking yourself?
Backing yourself?
Owning your story?
That’s rare.

And it’s powerul.

Watching Candy reminded me how important it is to lead with heart.

 He put people first.
 He connected.
 He cared without making a fuss.
That’s the kind of leadership we need more of.
 Not “me first.”
 Not ego.
 Just genuine connection.
 “We,” not “me.”

So here’s my moment:

 I like me.

 Not because I’m perfect — far from it — but because I’m learning, I’m growing, and I’m showing up with honesty, I have good and bad days!

If this encourages one person to like themselves a little more today…
 or to reach out and connect with someone they wouldn’t normally…
 then that’s a win.
